Peanut Butter Cookies
- 1 cup natural peanut butter
- 1/2 cup sugar and 1/2 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 3/4 teaspoon baking powder
Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper. Put all the ingredients in a medium bowl and stir with a wooden spoon until smooth.
Scoop out the dough into 1 tablespoon portions and place a few inches apart on the prepared baking sheet. Press a fork into the top of each cookie to flatten it slightly. Bake until the bottom edges are beginning to brown, 18–20 minutes. Let the cookies cool on the baking sheet; they will firm up as they cool.
Store in an airtight container for up to 1 week.
